010: BBQ Pork Baby Back Ribs

Ingredients
For the rub –
- Yellow mustard or Sriracha for binder (totally optional. We don’t always use it!)
- ¼ cup Wingman All-Purpose Seasoning
- ¼ cup dark brown sugar
- 1 rack of pork baby back ribs
For the sauce –
- 1 cup ketchup
- ¼ cup brown sugar
- 2 tbsp apple cider vinegar
- 1 tbsp Worcestershire or Soy Sauce
- 1 tbsp Wingman All-Purpose Seasoning
Instructions
- Prepare the ribs:
- Remove the membrane from the back of the ribs if it's still attached. This helps the rub penetrate better and ensures tender ribs. Use a butter knife to get under the membrane and peel it off with a paper towel.
- Rinse the ribs under cold water and pat them dry with paper towels.
- Make the rub:
- In a small bowl, mix together brown sugar and Wingman All-Purpose Seasoning
- Season the ribs:
- Rub the dry rub generously all over the ribs, covering both sides. Make sure to press the rub into the meat to help it adhere.
- Prepare your Traeger Timberline 1300 Smoker or any other smoker you have:
- Preheat your smoker to 235°F (113°C). Use your choice of wood chips or chunks for smoking; apple or hickory work well with pork ribs.
- Smoke the ribs:
- Once the smoker is preheated, place the seasoned ribs directly on the smoker grate.
- Smoke the ribs for 3 hours, flipping every 30 minutes.
- After 3 hours, wrap the ribs tightly in tin foil. Cook for another 2.5 hours.
- Unwrap the ribs and slather your sauce on top and cook for another hour.
- Finish and serve:
- Once the ribs are done, remove them from the smoker and let them rest for about 10 minutes.
- Optionally, brush the ribs with your favorite barbecue sauce before serving.
- Slice the ribs between the bones and serve hot.
